ominick Bellizzi has been cooking authentic Italian since his first job in his uncles New Jersey deli and pizzeria at age 13. He refined his skills by helping his mother in the family kitchen and worked in an Italian deli as a second job. The food industry was part of his growing up, his wife Raquel Bellizzi said. The Bellizzis own Dominicks, an authentic Italian-American deli and trattoria (restaurant), just like you would find in New York or San Francisco. You can take out, eat there or arrange for catering services for your next party. The market is 100 percent Italian in dcor, deli items and dishes. Behind the counter are sandwiches, arancini rice balls, calzone, Boars Head deli meats, prosciutto, pepperoni, Italian cheese and lots more. On the display shelves are pastas, LaVazza coffee the same as served in the Trattoria extra virgin olive oil, balsamic vinegar, bread sticks, tomato sauce and olives. On the lunch and dinner menus are lasagna, fettuccine, gnocchi, ravioli, Bistecca Al Funghi (grilled New York steak topped with portabella mushroom garlic butter sauce) and Giro DellItalia (Tour of Italy a combination of chicken parmigiana, baked lasagna and fresh fettuccine Alfredo). Their specialty is lasagna. Its what were known for, Raquel said. People often bring in their own serving pieces so that they

They opened the deli in 2004 and two years later opened the adjacent trattoria at the encouragement of customers. Dominicks New York Pizza and Deli opened in Folsom in 2010 at Blue Ravine Road and Folsom-Auburn Boulevard. We get a lot of East Coast customers who are used to the traditional mom-and-pop delis, Raquel said. They also get a lot of regulars from the area, people who recognize authentic Italian. Corporate Italian places are not Italian, Dominick said. Our place now thats Italian! You can get pizza by the slice, choosing from a New York combo, Chicken Cacciatore, Pizza a la Margarita and Pasta Pizza with Meatballs. Everything we do is from our hearts. She was a great cook and we had elaborate meals at her home, Raquel says. The recipes at the deli and Trattoria are from Dominicks mother, who occasionally visited the deli and sampled the dishes. If she didnt like something, shed ask, Why did you do that? Raquel said. That kept the cooks in line. We dont claim to be chefs, Raquel said, but we love to cook and share the traditions we were raised with. We feel like were in Grandmas kitchen. Their daughter, Daniela, works in the Granite Bay Deli and Trattoria, and son, Jerry, who is in high school, works at both locations.
Their favorite dish is pappardelle with homemade sauce, of course. Dominicks makes fresh sauces including pesto, alfredo, meat, bolognese and marinara. Several varieties of pasta are imported from Italy. The Bellizzis are thankful for the support theyve received from the area and, because of that, give back to the community by supporting several organizations and youth sports teams. We have a great appreciation for the community, Dominick said. And the community has a great appreciation for their delicious Italian fare. Like the traditional delis on the East Coast and Italy, Dominicks is a place to meet friends and chat over freshly prepared good food, Italian style.

I can have people knocking on my door who I didnt know were coming. I start chopping, open some wine and put out bread sticks, olives and Tarelli crackers, she said. Those are just a few of the items she brings home from Dominicks Italian Market & Deli, which imports items from Italy. Here are her tips for things to keep on hand for Italian food presto!

f you happen to be a guest at this dinner party, you better pack your Altoids. A group of Granite Bay friends gets together once a year to serve up everything garlic at a party theyve dubbed GarlicFest. Guests are forewarned that their tastebuds will be assaulted with this pungent member of the onion family, from garlic beef tenderloin to garlic cheesecake. As the invitation stated for this years event: Not for the faint of heart or those without breath mints. We will be honoring the worlds tastiest edible bulb with every bite we take. The foodie festival is exclusive to friends and family and grew out of the loss of a loved one. For several years, Granite Bay resident Rhonda Beyers attended the annual Gilroy Garlic Festival with a special friend. We just enjoyed being away from everybody, family and kids and all that and just kind of taking the day to ourselves, Rhonda Beyers said. Then around six years ago tragedy struck

four months before the festival, when her friend died of a massive heart attack. She was very young, it was really shock-
ing, Rhonda Beyers said. It puts everything in perspective. When the Garlic Festival in Gilroy rolled around that year, Rhonda was sad. To cheer her up Jeff Beyers, Rhondas husband, decided to stage their own garlic festival right at home. He invited Kathryn and Stewart Guthrie to join them and they had their own feast. Everything on the menu contained garlic. It was absolutely wonderful, Rhonda said. It was better than the Garlic Festival. Karen and David Pessin, friends of all four, heard about what they had done, thought it was a great idea, and suggested they convene at their house the next year. It has been held there ever since. This year on Aug. 27 the group hosted their sixth annual GarlicFest. They ended up with about 40 of their friends and family and associated kids, as Kathryn Guthrie put it. Its become the big event of the year, Kathryn Guthrie said. Its the last thing that we do before everybody settles into the school year.

We try to make not plain food, but nice, fancy food, David Pessin said. According to the Pessins, the event has two mottos: garlic in every bite and guys in the kitchen. Jeff Beyers is a gourmet chef, and since it all started with him cooking for Rhonda, the men have continued doing the cooking, though the women, and even the children, may jump in and help. The three couples the Beyers, the Guthries
need and he makes sure we have all the food. They also enlist the aid of some of the invited guests, especially in the cooking. One example is John Thompson, who has prepared the twice-baked potatoes several times. He was a guest but he was helping out a lot, and he was the primary guy working this massive bowl of potatoes and mixing it together, David Pessin said. The potatoes were just a real hit that year. They were so good, that when aprons were made for the chefs, one was made for Thompson labeled Potato Master John. The potatoes were put on the menu again the next year. Unfortunately, instead of using roasted garlic, he pulled from the bowl of raw garlic. When guests dug in, they found that the potatoes were bitter and inedible. Hes been given a hard time ever since. Karen Pessin said that they did let him back into the potatoes this year. And the tri-color twice baked potatoes were excellent this year, David Pessin said. The invitation list continues to grow. Karens parents, Ron and Sue Becker of Granite Bay, attended this year. What I like is I get to meet so many of Karens and Davids young friends, Sue Becker said. Thats really nice because theyve got a great group of friends.

and the Pessins take care of planning and organization. We have about four garlic festival planning meetings during the year, with just the Pessins and the Guthries and ourselves, Rhonda Beyers said. We try out the different recipes and we figure out what were going to have at the garlic festival and then Karen and Jeff usually do most of the shopping. She makes sure we have all the plates and things that we

ickey Ranch in Granite Bay offers something a bit different from the usual pumpkin-patch fare. Giant pumpkins and trick-performing ponies arent the only reasons for visiting. Patrons at the ranch have the privilege of meeting owners Aaron and Stephanie and their two young children who are trying their hardest to live off the land. The 165-acre property has been in Aaron Rickeys family for six generations, since 1863. These days, the Rickeys sell

their own grapes, cattle, honey, bee pollen, seasoned firewood and pumpkins. Although they have help from a ranch hand, seasonal workers and friends,
Rickey and his wife do a lot of the work on the farm themselves. All the other things keep (the farm) alive but October is our big month, Rickey said. He partnered with local pumpkin grower Richard Larson this year to create a Field of Giants including about 30 pumpkin vines. Larson showed Rickey how to prune and tend the pumpkin vines to maximize the size of the pumpkins. Each vine produces one to three giants.

Its all farming, but (mega pumpkin growing) is a whole other level, said Aaron Rickey, who learned farming from his grandfather and has farmed his whole life. Its extreme farming. Aaron Rickey had tried his hand at growing the big orange-gold orbs last year with puny results. He attended a seminar on pumpkin growing at a nursery and he and some friends competed amongst one another to see who could grow the biggest pumpkin. Rickeys best effort packed a mere 200 pounds. This year, with resolve to go bigger, he got up his nerve to seek help from Larson, who lives nearby. (Larson also was featured in last Octobers Granite Bay View.) With seeds from Larson, Rickey grew a near 600-pounder that was sixth heaviest at the National Heirloom Exposition in Santa Rosa last month. The ranch also won second place for prettiest pumpkin. Stephanie Rickey said

hen half a dozen teenagers choose to spend hot, summer-like afternoons in a watered-down dirt arena, one might question why they arent hanging out at a Starbucks or an air-conditioned mall. But when the Dentino fami-

lys horse, Landon, comes into view, all wondering will cease. A tall horse at 17 hands, the massive animals muscles ripple, taut beneath a midnightblack coat. Abby Dentino, a sophomore at Granite Bay High School, knows that once she mounts
her spectacular animal and begins her lesson, the whole world will fade away, leaving nothing but horse, trainer and jumps in view. Cavallo Stables, located at the Hunterville facility in Penryn, houses dozens of noble creatures, some boarded by
students and some owned by Cavallo owner and trainer, Sami Milo. Surrounding herself with the shiny-maned giants is nothing new to Milo. A horsewoman since the age of 5, Milo spent her formative years competing and her adult
years both working with some of Californias best trainers and training riders. Today Milo runs a thriving training business, working with riders from ages 5 to late adult. I trained with Patty Ball (Hunterville owner) for years as a child, Milo said. As an adult,
Ive worked as a trainer in various locations, but when Patty invited me to run my business here two years ago, I accepted right away. Cavallo Stables offers a full training program, which consists of several weekly lessons, a half training program that consists of two group lessons per week, and a payas-you-go lesson program. Its obvious that Milos students blossom in her care. Lithe and lean, the young riders practice
jumping and equitation with poise and confidence. Riding keeps you physically fit. You have to build core strength and arm strength, Milo said. But the sport isnt purely physical. I teach respect students develop courage and learn they have to be assertive with horses, Milo said. The Dentino family leaves their Granite Bay home several days a week for the short trip to the stables. According to mom Rebecca Dentino, riding has become a family affair. My daughter Lexi trained with Sami Milo for six or seven years before heading to University of Colorado, Boulder this year, she said. Lexi started lessons because a friend talked her into it. While the friend quit right away, Lexi fell in love with riding. Both Lexi and Abby Dentino have competed

in hunter jumper competitions, and Lexi recently earned a college scholarship through the Sacramento Area Hunter Jumper Association. Abby, determined to be as strong a rider as her sister, won a golf cart in
the Medal Finals Competition last fall. She plans to participate in numerous competitions this month, as well. The fall is a lot of fun, with all the shows, Rebecca Dentino said. There are a lot of events to choose from. Dentino said her younger daughter would love to ride for a college team and hopes to earn scholarships through riding. But in the meantime, the Dentinos are enjoying the journey. Its been great for me because Ive been able to spend all these high
school years with my kids. Ive loved this special time, Rebecca Dentino said. My plan is to start riding, myself. You cant beat this arena. This is the best arena around for training. While Milo works tirelessly, both with students and caring for the horses, she loves to ride whenever she has an opportunity. My goal, as a rider, is to do the big Grand Prix in our area. We have two very top quality horses, Milo said. My ultimate dream is to own a big facility like Hunterville.

ocal moms with young children need look no further than the MOMS Club of Granite Bay and East Roseville for camaraderie and opportunities to get involved in the community. This month the club joins with Granite Bay Library in hosting Read for the Record, a national program highlighting the importance of reading to disadvantaged children. More than 2 million children will enjoy public readings of the book Llama Llama Red Pajama, author Anna Dewdneys gentle story of a llamas difficulty settling down to bed at night. This marks the fifth year the club has organized Read for the Record in our area. Were inviting our MOMS Club as well as the community at large to come out and be with us at the Granite Bay Library, said Vice President Shelly Peterson. The club held the event at Maidu Branch Library last year, but switched this years venue to Granite Bay Library because its more convenient for members, Peterson said. Acting Granite Bay Library Branch Manager Shari Dearing said she was thrilled when she got the call from the club about holding Read for the Record in Granite Bay. Getting kids and anybody turned on to reading is what the librarys all about, Dearing said. She said picture books are particularly beneficial to children because they learn art appreciation as well as new vocabulary. In comparison, the popular easy-reader books contain less interesting pictures and simpler language. I think (Dewdney) found a formula that kids like, Dearing said. Its taking real life situations but putting them in kind of a funny format. The artwork is big and colorful.

I joined because I knew it would help with the transition to a new area and also provide ongoing support and activities for my son and me, said Leah Brown. She organizes playgroups for children with the same birth year as her son. Brown was involved in another moms group before moving to Granite Bay this year. Its a really good club if youre a brand new mom, or you have a 2-year-old kid, or multiple kids, she said. Theres going to be events and activities for kids and moms regardless of their ages.

cup pomegranate balsamic vinegar cup extra virgin olive oil teaspoon garlic powder Salt and pepper to taste Mixed baby greens cup thinly sliced red onion 1 red Anjou pear cup toasted walnuts cup crumbled Gorgonzola cheese Combine the first four ingredients. Thinly slice the pear. In a bowl combine the mixed greens, slice red onion, sliced pear and toasted walnuts. Drizzle on enough dressing to coat greens and toss. Top with crumbled Gorgonzola cheese.

icture this: A short drive out of town and you find yourself on a remote country road on the outskirts of Auburn. Amid rolling hills and evergreen shrubs, you spot a vineyard, with plump red grapes draped between the emerald leaves on the vine. Off in the distance, there is a farm. And another farm. Suddenly you realize, you are in the midst of a delicate kind of countryside. Imagine traveling to that vineyard and sitting down to a grand feast at an elongated table while a local gourmet chef prepares a six-course meal out of ingredients that were grown on those very farms you passed. The dinner is paired with fine wine made from the very grapes you sit amongst. That is the vision of Irie Gengler, local chef and owner of Source Global Tapas in Granite Bay, who says that the farm-totable concept is what inspires him as a chef. Its really working for supporting local farmers, especially here in Northern California, Gengler said. We have so much great produce all year round. I think its just that awareness of knowing where your food comes from. While sourcing local products is what inspired the theme of his restaurant, Gengler says that it is through actually visiting a farm or winery that people can connect with the food and drinks they consume. Thats why Gengler has partnered with Lone Buffalo Vineyards in Auburn to hold a farmto-table wine dinner at the winery this month, an experience he hopes to recreate every month at a different local farm

or winery. For me, the farm dinners are to get people to go out to the farm, Gengler said. They sit in the middle of the farm and they look around and see where (the food) is grown. So they have a real connection with the farm and the farmer or with the winery and the vines. This months dinner will take place on Sunday, Oct. 23 and will feature six courses made up from the freshest and best seasonal ingredients farmers in the area have to offer. Gengler said he is working with 12 different local farmers for the dinner, but he wont start composing the menu until about a week before the

event. Its really going to be whats in season that week from these farmers, he said. It depends on what they have available and what they want to show off from their farm. Lone Buffalo Vineyards co-

Maddux said she and her husband, winemaker Phil Maddux, will definitely be pouring their two signature wines the Bison Blanc viognier and Where the Buffalo Roam, a Rhone blend of syrah, mourvedre and grenache. We think viognier is just a wonderful white wine for the foothills, Jill Maddux said. It showcases what the foothills can do. As far as what other wines will be poured, Maddux said it will depend on what Gengler prepares for dinner. She speculated, however,

that the Tatonka Temperanillo will likely be served since it is a Spanish varietal that pairs well with tapas and that the Pawnee Tawny port will likely follow for the final course. We are the only ones in the county that make a real tawny port, she said. Thats probably what I would think will end up at the back end with the dessert. This is the second time this year Gengler will be hosting such a dinner, the first being in July at Spoto Winery in Fair Oaks. Reservations for the dinner are capped off at 50 people, since that is how many will fit at the giant, long table. Its really for people to have fun, Gengler said. Its in a relaxed atmosphere. The farmers are there, the wine makers are there. Tours of the Lone Buffalo vineyard will begin at 3 p.m. followed by wine sampling at 4 p.m. Dinner will begin to be served at 4:30 p.m. Tickets are all-inclusive for dinner and wine, which, according to Gengler, will be generously poured and paired with each course. Lone Buffalo Wine Club members who attend the dinner will also receive a complimentary bottle of wine per couple, Maddux said.

The 46 varieties grown on her ranch include Summerset and Late Alemar peaches, French prunes, and Asian pears, and yes, we sampled all of them. The season for her harvest runs from May through September. As we started bagging the sweet treats, it was evident Jeanette received a lot of pleasure from our appreciation of her fruit. With Judy needing advice on her next home project of planting a peach tree, Jeanette went the extra mile in sharing how to care for the tree, discussing watering frequency, as well as the treatment for and prevention of leaf curl. We left with a wonderful taste in our mouths (pun intended) as we left the Rice River Ranch stand and headed over to see the yummy bread at

The Upper Crust Baking Company stand. A down-to-earth young lady named Rocky Miller, with her head bandana, made me think she could be the baker. She
gave us a lesson on homemade bread as we gazed longingly at the honey flax peasant bread, country French rounds, baguettes, apple tarts and tartlets (for one), and a braided beauty called Jewish Challah bread, which resembles sweet bread in flavor. Especially interesting was
their birdseed bread, a raisin/ walnut concoction which took the preliminaries in a contest run by the California Raisin Board last year. Upper Crust was started by husband and wife team of over 49 years Mo and Trudy Kalisty, who are originally from Manhattan, New York. Rocky told us that Mo creates the ideas for the breads and bakes them to be delicious and healthy, using whole wheat and whole grain. Trudy filled in, Mo experiments with different dough. The whole wheat/whole grain delivers extra fiber to our breads. My own health has improved dramatically with this dietary change. I used to have high cholesterol and I no longer do. The time we spent at Quarry Ponds was a pleasant start to our Sunday morning as we headed off to church with contentment.

Sticky situation
ocals buzzed over to Ron Feist Park in Granite Bay Sunday for the second annual Honey Festival. Organizer Jim Crosthwaite said the festival was created to give Granite Bay a hometown festival of its own. More than 100 vendors peddled goods including honey and honey products while attendees enjoyed live music and lots of samples. Things got competitive in the honey bear races, where entrants used the iconic honey containers to make pinewood derby cars. Representing Nugget Markets William and Luke Dowden won the race and $100 in prize money. tap here, a stomp there and a broom swish over there these are the rhythmic sounds of the nationally touring production, STOMP . STOMP rehearsal director and performer Andres Fernandez said the show is simply an exploration of sound. We make music with every day sounds brooms, kitchenware and other objects, Fernandez said. The show was originally created in 1991 in Brighton, UK by Luke Cresswell and Steve McNicholas. In 1995, the US tour began. Luke and Steve were street performers and self-taught percussionists in England and wanted to bring their rhythm to the stage, Fernandez said. It was a great idea and has lasted forever because everyone can relate to it.
All ages, from 2 to 90 years old, can relate. Its theater, but not really theater. The show is infectious. People leave with their toes tapping. Fernandez said the idea of STOMP is everywhere. Whether someone is tapping their thumbs on a steering wheel while listening to the radio, or tapping a spoon on a mug, everything has a rhythm. The original cast in 1991 had eight people in the performance. Today there are four companies
throughout the world with 12 members, eight onstage performers and four extra members. The behind-the-scenes crew includes a sound specialist, electrician, lighting specialist, prop specialist, carpenter for stage props, a company manager and a merchandise specialist. Originally from Hawaii, Fernandez has been singing and dancing with his older brother, Johnny, while touring the Hawaiian Islands since 1985. Fernandez has been touring with STOMP for 14 years. He was inspired to join after seeing them perform in 1996 in Hawaii. He said throughout the years with the show, he has performed all eight roles as a cast member and has also taken on the role of rehearsal director for the US tour to ensure everything is kept organized while traveling. Its so much fun and

we get to be ourselves on stage, he said. The show is never the same because there is so much room for improv or acting. Also, with new casts, its always changing. Fernandez said it takes new cast members a few months to get the music and feel of STOMP perfected. We are making our own music on stage, so we all have our own counts we have to feel. So with one wrong count as someone is learning, it can throw off the cast. But thats just the excitement of STOMP . Three Stages has kicked off its first full season this year and reports strong ticket sales. The season is off to a great start, said Dave Pier, executive director for Three Stages. On opening weekend we had three sold-out performances of In the Mood and the crowds loved it. Pier said a number of other shows are already sold out, or are about to be, including Dana Carvey, Kris Kristofferson, Irish Christmas which just added a second show and is already half sold as well. The larger Broadway shows like STOMP and Monty Pythons Spamalot are selling strongly, but still have good availabilities because each has four or five performances, so more seats are available, Pier said. He said many of the Centers partners are also selling well including the Folsom Lake Community Concert Association. Even with all the sellouts, though, there are still lots of great shows that people can still get tickets for family shows, dance, theatre and concerts, Pier said. I encourage people to experiment a little with their selections and try taking a chance on a

show that sounds interesting but perhaps youve never heard of before. All are reasonably priced, and more continue to be added each week. here is nothing quite as frustrating as seeing your results fizzle out. This is a common place to end up, usually after a few months on the same exercise routine. In the beginning your body responds to your routine with lost pounds and gained muscle tone, then one day all results screech to a stop. Why does this happen? And, more importantly, how can you prevent it? Your muscles adapt quickly to any repetitive routine. Remember that the definition of insanity is doing the same thing over and over while expecting different results. This holds true for your workouts. When your results stop, its time to do something new. The problem: Your muscles have adapted to your routine.

This is how to do a drop set:
The solution: Its time to apply the concept of muscle confusion. Muscle confusion is a way to keep your body guessing by changing your routine. The following four strategies are guaranteed to crank your workouts up to the next level and to deliver better results.
When you perform an exercise to exhaustion, dont stop there. Drop the weight by 80 percent and do another set. You could take it a step further by dropping the weight twice, making it a double drop. Or drop the weight three times for a descending drop set. Use this technique only once or twice per workout, on the final set of the exercise.
Static strength: holding weight in a contracted position. Negative strength: lowering the weight. Most people completely miss the benefit of the negative in each repetition by allowing the weight to drop quickly with little control. It is understood that the negative portion of each repetition is just as important as the positive portion, possibly more important. Focus on the negative portion of each repetition by lowering the weight very slowly. Concentrate on the negative contraction, and make each repetition count. If you are advanced, then use a training partner to assist you in moving heavier-than-normal weight into a contracted position, then lower it very
slowly. Another way to utilize negative repetitions on a machine is to lift the weight using two limbs but then lower it with just one. For example, use both legs to lift the weight on a leg extension machine, but then lower it back down slowly using only one leg.

each knee high to your chest in a quick jumping movement while alternating forward punches at shoulder level. Burpees: Start in a sanding position and bend at the waist. Once your hands hit the floor, push your entire body back, extending your legs until theyre straight and youre in the push-up position. Go down for a push-up, and when you push yourself up, jump slightly to bring your feet back near your hands. Finally, jump in the air with your arms fully extended over your head.
Side-to-side jumps on bench:
up and switch feet, then land on the opposite side of the bench. Mountain climbers: Place your hands wider than shoulder-width apart on the ground in a push-up position. Bring one knee to your chest and then back to the starting position, alternate each leg quickly. Side-to-side ab twists: With feet close together, jump and twist your legs left to right holding your abs tight. Keep a bend in your knees and swing your upper arms with each twist.
Jump lunges with pop squat:
With feet wider than shoulderwidth apart hold a medicine ball at chest level. Squat down until your knees are at a 90 degree angle. Explosively jump up, raising the medicine ball straight over your head.
Stand on one side of an exercise bench. Place the foot closest up onto the bench, jump
Start in a lunge position, lunge down then quickly jump up, switching your leg position in midair, land in an opposite leg lunge. Once youve done both legs, jump straight into a squat.
Medicine ball squat jumps:
your shoulders and do walking lunges. Use an exercise ball for chest presses instead of the bench. Do a full squat between each repetition of shoulder presses. Do a shoulder press between each repetition of bicep curls. These strategies are some examples of muscle confusion. Keep your level of fitness in mind when designing your own muscle confusion strategies. A muscle confusion strategy could be as simple as continuing your walking routine at your usual pace and adding arm raises every few feet. Have some fun mixing it up!
