Concept / Topic To Teach: Modifying recipes and Reading Food Labels Standards Addressed: 1.5 Use numerical data analysis in real-world problem solving 5.3 Identify food safety and sanitation procedures in the kitchen 5.5 Evaluate food label information and food cost 10.5 Cooperate within a multicultural environment to achieve goals General Goal(s): TSW demonstrate their ability to follow a recipe while practicing proper food safety and sanitation procedures. TSW evaluate food label information to determine the nutritional content of their cookie. Specific Objectives: TSW work within a group to prepare a cookie recipe that they have modified during a previous lesson. TSW calculate the nutritional content of their cookies using a formula given to them along with the information they will locate on the nutrition labels of the ingredients they use. Required Materials: Cookie ingredients (will differ by group and class) Kitchen Equipment (bowl, spoon, cookie sheet, knife, spatula) Basic Cake Mix Cookie Recipe with the modifications made by each group Nutritional Information Formula (written on the board) Calculator Anticipatory Set (Lead-In): TTW quickly run through tips for successful cookies as well as the steps needed to find the nutritional content. (This will be brief because the entire class period is needed for the lab) Step-By-Step Procedures: 1. Students will break up into their cooking groups and wash hands while the teacher sets out the ingredients needed for the lab. 2. Students will prepare their cookie dough and drop it on pans for baking while the teacher monitors and helps when necessary. 3. While the cookies are baking the group will use the formula on the board to figure out the nutritional content of their cookies. The teacher will help with this process. 4. Students will finish cleaning the kitchens, take the cookies out of the oven and separate them out on plates to take with them. Closure (Reflect Anticipatory Set): Students will taste their cookies and get feedback from the teacher on taste and how they did. Assessment Based On Objectives: TSW be observed to determine if they are following proper kitchen safety and sanitation procedures. TSW provide the nutritional content of their cookies by the end of class to be used in the following activity. These will be checked for accuracy. Possible Connections To Other Subjects: The formula used to find the nutritional content is a basic algebra equation, and the students are also using basic addition skills as they add and measure ingredients.
