Banana Wheat Bread

Ingredients

2 cups whole wheat flour 1/4 cup wheat germ 1 teaspoon salt 1 teaspoon baking soda 1 1/2 cups mashed bananas 1/4 cup vegetable oil 1/2 cup honey 2 eggs 1 teaspoon vanilla extract 1/2 cup chopped pecans

Directions
1. Grease a 9 x 5 inch loaf pan. Preheat oven to 350 degrees (175 degrees C). 2. Combine oil, honey, eggs, vanilla, and mashed bananas in a bowl. 3. In a large bowl, whisk together flour, wheat germ, salt, and baking soda. Make a well in dry ingredients, and add the banana mixture. Mix together until dry ingredients are moistened. Stir in nuts. Pour batter into prepared pan. 4. Bake 1 hour in preheated oven. Test for doneness, and cool on wire rack.

Ingredients

2 packages (1/4 ounce each) active dry yeast 3/4 cup warm water (110 to 115) 1 cup old-fashioned oats 1 cup warm buttermilk (110 to 115) 1/2 cup maple syrup 1/2 cup honey 2 eggs, lightly beaten 1/3 cup butter, softened 1/3 cup toasted wheat germ 1 teaspoon salt 1-1/2 cups whole wheat flour 3 to 4 cups all-purpose flour TOPPING: 1 egg white 1 tablespoon water 1/4 cup old-fashioned oats

Directions

In a large bowl, dissolve yeast in warm water. Add the oats, buttermilk, syrup, honey, eggs, butter, wheat germ, salt and whole wheat flour. Beat on medium speed for 3 minutes. Stir in enough all-purpose flour to form a firm dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour. Punch the dough down. Shape into two loaves; place each in a 9-in. x 5-in. loaf pan coated with cooking spray. Cover and let rise in a warm place until doubled, about 45 minutes. Beat egg white and water; brush over loaves. Sprinkle with oats. Bake at 375 for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool. Yield: 2 loaves (16 slices each).

Ingredients: Pastry for 2 crusts (recipe below) 8 cups sliced, peeled assorted baking apples - about 3 lbs. (Granny Smith, Cortland, Jonathan) 2 Tablespoons lemon juice 3/4 cup white sugar 1/4 cup brown sugar 1/4 cup all-purpose flour 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 2 Tablespoons butter 1 egg yolk 1 Tablespoon milk Directions: 1. In a large bowl, toss the sliced apples with lemon juice. 2. Combine sugars, flour, cinnamon and nutmeg; add to apples and toss well to coat. 3. Fill pastry lined 9 inch pie pan with apple mixture. Dot with butter. 4. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or by hand. 5. In a small bowl, beat the egg yolk and milk. Brush mixture over top crust. 6. Bake at 425 degrees F for 15 minutes. 7. Reduce heat to 350 degrees F and bake 40-45 minutes more or until crust is golden and filling is bubbly.

Flaky Pastry Pie Crust Recipe Makes two 9-inch pie crusts Ingredients: 2 1/2 cups all-purpose flour 1/2 teaspoon salt 1 cup butter, chilled and diced 1/2 cup ice water Directions: 1. Combine the flour and salt in a large bowl. 2. Cut in the butter until the mixture resembles coarse crumbs. 3. Stir in the ice water, a Tablespoon at a time, until the crust mixture forms a ball. 4. Wrap dough in plastic wrap and refrigerate for 4 hours or overnight. 5. Sprinkle flour onto rolling surface. Roll dough out, then divide in half. Roll each half to fit a 9-inch pie plate. 6. Place crust in pie plate, pressing evenly into the bottom and sides.
