Peanut Butter vs.

Peanut Flour

What is PB2?
PB2 is a powdered peanut butter, made by squeezing natural oils out of the peanut and then
dehydrating what’s left, yielding a powder in which 90% of the fat is removed from the peanut.
Topic and Problem Statement
-Compare the effect of peanut butter and PB2 (peanut
flour) in a peanut butter banana smoothie.

-The purpose of this experiment is to determine if


replacing real peanut butter with PB2 (also known as
peanut flour/powder) has an effect on the taste, texture,
consistency, and overall acceptability if placed in a
smoothie.
Hypothesis

PB2 is not a compromisable


substitution for real peanut butter
because there is a significant difference
in the taste, texture, and consistency.
Subjective and Objective Measurements

Subjective: Texture, flavor, and overall acceptability were measured on scales


ranging from 0-10, zero being strong dislike and ten being strong like.
Participants were also asked to rank the smoothies in the order they
preferred.

Objective: Focused on thickness, viscosity, and overall texture of the


smoothies. A line spread test was done to measure the viscosity of the
smoothies.
Taste

The flavor of each smoothie was rated


subjectively on a scale from 0-10. The
traditional peanut butter smoothie was on
average the more flavorful of the 2
smoothies, with an average rating of 9 out
of 10. The less flavorful smoothie was the
PB2 smoothie, with an average rating of
7.25 out of 10.
Texture

The texture of each smoothie was rated


subjectively on a scale ranging from 0-10.
The traditional smoothie had the highest
overall acceptability rating of 9.5. The less
overall acceptable smoothie was the PB2
smoothie with an average rating of 9 out of
10.
Thickness

The thickness of each smoothie was rated


subjectively on a scale ranging from 0-10. The
traditional smoothie had the highest thickness
rating with 6.5 out of 10. The less thick smoothie
was the PB smoothie with an average rating of
4.75 out of 10.
Overall Acceptability

The overall acceptability of each smoothie was


rated subjectively on a scale ranging from 0-10. The
traditional smoothie had the highest overall
acceptability rating of 8.5 out of 10. The less overall
acceptable smoothie was the PB2 smoothie with an
average rating of 7.75 out of 10.
Line Spread Test

-Due to the unexpected thinness and consistency of the smoothie, when conducting the line spread test for
the two smoothies, they ran all over the paper. For this reason, I was unable to calculate it.

-This could be because I used only milk, instead of adding yogurt.

Overall Effects of PB2 on smoothie

-Created a more bitter taste (not as desirable)

-Masked the fruit taste

-Made the texture very smooth

-Less prominent peanut butter flavor

-Consistency was thinner


Nutritional Differences

The PB2 smoothie has substantially lower nutritional stats, making it more ideal for something trying to
loose weight or maintain a certain weight. However, fat is necessary for the proper absorption of some
vitamins, such as vitamin D, A, E and K, and the smoothie with regular peanut butter may be more
sustaining.
Conclusion

-Although the PB2 substitution made a successful smoothie, it did not only provide a comparable
smoothie to the original peanut butter banana smoothie.

-Overall, the judges preferred the original peanut butter banana smoothie when rating on texture,
taste, consistency, and overall acceptability.

-The PB2 smoothie was much lower in calories and fat, making it the healthier option.
