Viscosity is “the measure of a fluid’s internal flow resistance”

Viscosity, h= Shear Stress/ Shear rate = τ/ν

UNITS
Shear stress, ν = Force/Area = N/m2 = Pascal
Shear rate, τ = Velocity/Distance =m/s/m = s-1

Shear viscosity, h= τ/ν = Pascal/s-1 = Pas

Stress /torque required to keep the rpm constant

TIME INDEPENDANT
1. Shear thickening or Dilatant :
Eg. cream becomes butter, clay slurries
Increase in viscosity with increase in shear rate

2. Shear thinning or Pseudoplatic: eg. Emulsions & dispersions


Decrease in viscosity with increase in shear rate

3. Bingham Plastic: Eg. Tooth paste, tomato ketchup, mayonnaise


(material where flow is undesired under standing conditions)
Has internal forces which hold it from flowing
below certain value of shear stress

TIME DEPENDANT
Thixotropic: Eg. Tomato ketchup, mayonnaise (gel-sol)

Decrease in viscosity with increase in shear rate and then up on stopping shear, they
regain its structure but time dependent
